Checking it properly involves diagnostics tools that read live data, I wouldn't recommend tinkering with the fuel system without proper knowledge. Honestly, it sounds like you should get it to a workshop and have them check the fuel pressure regulator. It's probably faulty, especially after changing the fuel filter. They'll be able to diagnose it properly and replace the part.

You were spot on. The shop confirmed the fuel pressure regulator was defective, likely from an error after I changed the fuel filter. They replaced it, cleared the error codes, and the car is running great again. The total cost was only 45€, which is far less than I had feared. I had pretty much the same symptoms on my Xsara. The ECU was throwing codes related to fuel pressure. It all started after I messed with the fuel filter. Have you checked the fuel rail pressure?
