Intake manifold flap control? I'm not really familiar with that. Is that difficult to check? Where exactly is it located, and is it something I can easily replace myself?

Okay, so the intake manifold's job is to distribute the air evenly to each of the engine's cylinders. The flaps inside help control the airflow, especially at lower engine speeds. If the switch that controls these flaps fails, it messes up the airflow. I am not sure how technically skilled you are, but if you are not familiar with engine components, I would highly recommend taking it to a workshop and have them check it. It's a fairly common issue and they should be able to diagnose it quickly.

Thanks for the advice! I took it to a local mechanic, and they confirmed it was the intake manifold flap control. Cost me 465€ to get it fixed, but the car is running much better now.

Sounds familiar. I had similar symptoms with my old BMW 3 Series. The hissing noise is the key here. Have you checked the intake manifold flap control? It might be defective and causing airflow control problems. Is it possible that the intake manifold flap is not opening and closing properly?
