Is there a specific way to check the cable and plug connections to each coil pack? Should I be looking for anything in particular, or is it just a visual inspection?

Just give them a good visual inspection. Make sure all the connections are snug and clean, no corrosion or anything. If it's still playing up, and especially with those symptoms, it might be worth getting it hooked up to a diagnostic tool. Could be a faulty coil, but best to be sure. It might be worth going to the workshop and let them have a look at it.

I took it to the workshop, and you were spot on - turned out to be a defective ignition coil and its cable. They replaced the coil, charged me 95€ including diagnostics, and now it's running smoothly again!

Sounds familiar. I've got an Astra too, and a while back I had similar symptoms – rough running and the engine stalling. Turned out to be a bad coil pack. Have you checked the cable and plug connections to each coil? A dodgy connection can cause mayhem.
