Coolant level's fine, and the fan seems to kick in eventually. But could it be the thermostat? I've heard those can cause issues like this. And what does map thermostat mean?

A defective thermostat is a likely cause, especially the map-controlled type. It regulates the engine temperature and a failure can result in the symptoms you describe. Given the specifics, a workshop visit is advisable to diagnose it properly. You might be looking at around 350€ for the repair.

Overheating and slow warm-up on a Toyota Auris can indicate a problem with the cooling system. Have you checked the coolant level? Also, is the radiator fan operating correctly? When was the last time the coolant was changed?
