Hey there! I had a similar issue with my 2009 BMW X5 last summer. The AC symptoms were exactly like yours, inconsistent operation and no cold air. Turned out to be faulty expansion valves that were causing refrigerant flow problems. My mechanic found that the individual valves in the AC system had deteriorated over time. These valves control the refrigerant flow, and when they fail, the whole AC system becomes ineffective. It was actually a pretty serious issue since running the AC with faulty valves could have damaged the compressor. The repair involved replacing the expansion valves and recharging the system with fresh refrigerant. The job took about half a day at the shop. While they had it open, they also cleaned the evaporator and checked all the AC lines.
