Terminals are clean. The battery isn't that old. Could the defective sensor be a parasitic draw problem?

Definitely sounds like that sensor could be the culprit, causing weird readings and over-discharging. Probably best to get it checked professionally before you end up stranded!

Whoa, sounds rough! Have you checked the battery terminals for corrosion? Could also be a parasitic draw somewhere. Is the battery itself old?
