No, I haven't checked the fuel rail pressure specifically. How would I go about testing that? Are there any specific tools required, or is it something a novice can handle?

Testing fuel rail pressure requires specialized tools and knowledge. Given the symptoms and your self-described expertise level, I recommend taking your Ford GT to a qualified workshop for diagnosis. Continuing to run the engine with a suspected fuel delivery issue can lead to further damage.

Thanks for the advice. Took it to the shop, and you were spot on - faulty cold start injector. Repair cost was 515€. Appreciate the help!

It is possible that a defective injection valve/injector is the source of your issue. Have you checked the fuel rail pressure during cold starts? A drop in pressure could indicate a leak or a malfunctioning injector.
