The malfunction seems independent of trip length or idle duration, though it's slightly more frequent after inactivity. Was your Opel Insignia issue due to a degraded battery?

You hit the nail on the head! The battery was failing, causing havoc with the Start-Stop system. I'd get the battery checked at a workshop to save yourself a headache.

The diagnostic confirmed a heavily discharged and defective battery. Replacement cost 290€. The Start-Stop system is now working normally. Thanks for the help!

Funny you ask, I had a similar problem with my Opel Insignia last year. The eco mode was acting up, engine start was a gamble, and the idle stop was more of an engine stall. When does the start-stop fail? Is it more frequent during shorter trips or after the car has been sitting?
