Turned out to be a small crack in the exhaust manifold, causing a change in temperature and incorrect readings from the exhaust temperature sensor. I'd suggest getting it checked at a workshop; they can pinpoint the leak and replace the sensor if needed.

Appreciate the insight. Took it to the shop, and you were spot on. Small exhaust leak causing the sensor to misread. Sensor replacement plus welding the leak set me back 265€. Runs like new now.
