Sounds familiar. I had a similar problem with my old Opel Astra after around 160000 km. The engine management light was on constantly, and performance dipped noticeably. Yes, the leak led to wild temperature fluctuations, which the sensor dutifully reported. I couldn't find the leak myself, so I took it to a workshop. They smoke-tested the exhaust to find the crack. Best to get it checked out, as driving with it could damage other components.

I appreciate the advice. Took it to the local garage, and it turns out you were spot on. There was a small crack in the exhaust manifold, right before the sensor. The repair cost 265€, including the sensor replacement. All is good now!
