Yes, the battery voltage seems unstable. Could a defective battery sensor be the only thing causing these problems?

In my case, yes, the battery sensor was the problem. I'd still recommend a workshop visit to be sure, as it could also be a failing alternator, but the symptoms and diagnostics strongly suggest it's the sensor. Replacing it fixed everything. It cost me 315€.
