Alright so, it was throwing codes related to the manifold pressure. My mechanic used a smoke tester, and it turns out there was a big leak around the intake manifold gasket. Replacing the gasket and the sensor fixed everything. Honestly, I'd just take it to a trusted mechanic at this point. Saves a lot of guesswork!

Thanks. I'll take it to a workshop and mention the possibility of a vacuum leak and the manifold pressure sensor. I appreciate the help, it looks like the problem was indeed a large vacuum leakage caused by a faulty manifold pressure sensor. The sensor replacement cost me 235€.
