I've checked the accessible wiring, but I don't have diagnostic tools to go further. Could a sensor calibration fix this, or is a hardware fault more likely given all the symptoms?

Given the AC, washer nozzles, and mirror heating issues, a sensor recalibration is unlikely to fix it. The combination of these problems suggests a wiring fault or defective sensor. I recommend taking it to a workshop.

I consulted a technician, and it was a defective cable connection. The repair cost 95€. Thanks for the help with the sensor diagnostics!

A cable or plug connection issue aligns with typical failure modes for outside temperature sensors. Have you visually inspected the sensor and its wiring for damage, corrosion, or loose connections? Did you check the fuses?
