The error code was fairly specific, something along the lines of 'oxygen sensor signal too low.' Would a faulty connector cause that even if the sensor itself is still functional?

Yes, absolutely. A bad connection will disrupt the signal from the sensor to the ECU, leading to that error. I'd suggest having a workshop confirm the diagnosis. They have the proper tools to test the sensor output and the wiring integrity.

Thanks for the advice! I took it to a mechanic, and you were spot on. The cable and plug to the O2 sensor were indeed defective. They replaced it, and now the check engine light is off, and the fuel consumption is back to normal. Total cost was 95€.

I had a similar issue with my old BMW. Same symptoms: check engine light, fuel efficiency tanking. The diagnostic pointed to the O2 sensor as well. In my case, it turned out to be a corroded connector. Was the error code specific, or more generic like 'sensor circuit malfunction'?
