Refrigerant leaks, got it. Where would I check for those, exactly? And is the AC relay easy to get to?

Refrigerant leaks are tricky to spot without proper tools. Look for oily residue around connections. As for the relay, check your manual, it should show where the AC relay is located. If it's not that, undervoltage could cause problems. Honestly, with it being so new, a workshop might be your best bet to diagnose it properly.

Thanks for the tips! Took it to a shop and it turned out to be undervoltage. They fixed it for 240€. Appreciate the help!

Sounds familiar. I had a similar issue on my old car, though it wasn't a Peugeot. Have you checked for any obvious refrigerant leaks? Also, might be worth looking at the AC relay. Sometimes those relay switches get flaky.
