Thanks for the tip. I haven't checked for vacuum leaks specifically, but I haven't noticed any obvious hissing sounds. Where exactly should I be looking for these leaks? Is it easy to spot them, or does it require special equipment?

Without specialized tools, you're mostly relying on your senses. Listen carefully around the intake manifold and vacuum lines when the engine is running. Sometimes, you can feel a slight suction if you get close enough. Given the symptoms and the potential difficulty in locating it yourself, I'd suggest getting it checked by a workshop. It might be a faulty MAP sensor, but a proper diagnosis is key.

Thanks for the advice, I'll get it looked at. Turns out it was the manifold pressure sensor and a pretty sizable vacuum leak. Workshop charged 235€ for parts and labor. Runs like new now!

I had a similar issue with my 208. Those symptoms do sound familiar. Have you checked for any obvious vacuum leaks? A large leak can definitely throw off the manifold pressure readings and cause those problems.
