I haven't personally checked the gearbox oil level, as I'm not confident I can do it correctly. Could a low oil level really be the only cause, or could there be other underlying problems?

While other issues could contribute, a low oil level is a prime suspect given the symptoms and error code. It's best to take it to a workshop; they'll be able to confirm the oil level, check for leaks, and properly diagnose the sensor itself. If it is just a sensor, that will be easy to replace.

I took the Peugeot to a local garage, and the gearbox oil level was critically low. After topping it up and replacing the faulty transmission oil temperature sensor, the issues are resolved. The total cost was 365€.

The symptoms sound like transmission overheating problems. The sensor fault is a good clue. Have you checked the gearbox oil level? Low oil can cause the transmission to overheat, leading to sensor errors and the symptoms you're seeing. When was the transmission oil last changed or checked?
