Thanks for the tip. Coolant levels seem fine, no visible leaks. I'm leaning towards a sensor calibration issue, but not sure where to start. Was your Saab issue definitely a bad sensor, or could it have been something else?

In my case, after some diagnostics, the workshop told me that the air conditioning control unit was defective. I was quoted about 980€ for the repair. So I suggest you go to the workshop to have your car inspected.

Sounds familiar. Had similar symptoms with my old Saab 9-3, though it turned out to be a sensor malfunction in the HVAC system. Have you checked for any coolant leaks around the heat exchanger? That could mess with the sensor readings.
