S7 Cooling System Shows Mixed Temperature Signals

My S7 has been acting up lately with some weird temperature control issues. The engine overheating light comes on regularly, but oddly enough, it also takes forever to warm up to normal operating temperature. Previous mechanic suggested a faulty thermostat but I am not convinced. Anyone else experienced similar cooling system problems with their 2015 S7? Mine has 117193 km on the clock and runs on gas. Looking for advice before taking it back to a shop, as my last mechanic visit was not great.
