No, I haven't noticed any real change in performance, it drives just the same as always. As for the oil viscosity, I honestly can't remember what I used. What would be the next step to check the engine bearings, and how difficult is it?

Given the warning lamp and engine noises, continuing to operate the vehicle risks significant engine damage. Checking the engine bearings requires specialized tools and knowledge. I recommend having the vehicle inspected by a qualified workshop. A mechanic will be able to accurately diagnose the cause of the low oil pressure and provide appropriate recommendations. It is possible the oil pump has failed.

I took it to the workshop as you suggested, and you were spot on. Turns out the oil pump was defective. I got it replaced, and the total repair cost was 755€. Expensive, but at least my Saxo is running smoothly again. I appreciate your help!

The symptoms suggest low oil pressure. While a faulty oil pressure gauge is possible, the loud mechanical noises suggest a more serious problem, possibly from the engine bearings. Have you noticed any changes in engine performance? What oil viscosity did you use during your last oil change?
