Pressure switch, huh? Where exactly is that located, and is it something I can check myself without needing special tools? Also, what kind of other electrical weirdness should I be looking for?

Okay, so I am not an expert, but the symptoms sound familiar. My A/C compressor was cutting out due to a similar issue. I never located the pressure switch myself, to be honest. I just got fed up and took it to a workshop. They said there were voltage issues messing with the HVAC system. It is probably best to have a professional check the electrical system.

Took it to a workshop, and it turned out to be undervoltage causing the A/C compressor to shut off intermittently. They sorted it out, cost me around 240€. Thanks for the pointer!

I think I had something similar happen with my Altea. The A/C system would just randomly stop cooling. Did you check the pressure switch? I'm not an expert, but maybe it's worth a look. Have you noticed anything else weird happening with the car's electrics?
