Interesting, where exactly is the AC relay located? And how would I check if it's faulty? I'm not super familiar with car electrics.

For me the AC relay was the culprit, my mistake was to not go to the workshop before. If you aren't sure how to check the AC relay yourself, best bet is to take it to a workshop for AC diagnostics. Could save you a lot of time and hassle.

I took your advice and brought the car in. The AC diagnostics showed a refrigerant leak and some faulty valves. The quote for the repair is around 1000€, which is a bummer, but at least I know what's going on. Appreciate the help!

Sounds familiar! I had a similar AC problem with my Seat Ibiza. Have you checked the AC relay? Sometimes a faulty relay can prevent the whole cooling system from kicking in.
