I haven't checked the plugs individually, no. Is there a straightforward way to test them without pulling them all?

While there are methods using a multimeter to test resistance, it might be tricky without proper tools or experience. Given the smoke, a defective control unit seems plausible, especially if it's affecting multiple glow plugs. It might be best to get it properly diagnosed at a workshop to confirm before replacing parts. Stalling could become an issue.

Cheers for the input. Ended up being a faulty connection as suspected. 95€ later and the Seat is running smoothly again.

That's a concerning set of symptoms. Have you checked the glow plugs themselves? A faulty glow plug can sometimes cause similar issues before the control unit is flagged as defective.
