I have encountered similar symptoms with my Ibiza. Check the wiring harness and connector for the water sensor. An electrical fault in that area is a plausible cause.

The water sensor is typically located near the fuel filter. In my case, the electrical fault was indeed within the connector itself. Replacement of the connector resolved the issue. Considering the symptoms you described, a professional workshop visit might be worthwhile.

I appreciate the insight. Following your advice, I performed car diagnostics and the error memory indicated a water sensor malfunction. Upon inspection, the cable connection exhibited signs of corrosion. After replacement, the issue seems resolved. The malfunction indicator is off, and the engine is running smoothly again. Total repair cost amounted to 95€.
