Yes, I performed car diagnostics and it indicated a control unit communication error. Could a defective cable or plug connection really cause all these problems?

A control unit communication error can definitely cause those symptoms. In my case, it was a wiring issue causing intermittent connectivity problems. Is it worth fixing it yourself? Probably not. I would suggest a workshop.

Thank you for the information. It seems that you have accurately pinpointed the problem. As suspected, the diagnostic report indicated a connectivity issue. The workshop identified a defective plug connection on one of the sensors. Repair cost 95€. Hopefully this resolves the issue permanently.

Overheating and coolant spills? Sounds serious. I had a similar issue with my old Opel Corsa, although it wasn't a Seat. The check engine light was on too. Did you perform car diagnostics? What diagnostic trouble code did you get? It might be a data link problem.
