When you mention checking the hoses, is there a particular area I should focus on? And how would I identify a faulty pressure sensor?

Okay, given all those symptoms, especially the stalling, a faulty bypass valve seems like the most probable cause. It’s responsible for regulating the boost pressure. While checking hoses is good practice, a failing valve can definitely cause all those issues. If you're not comfortable testing it yourself, I'd advise a workshop. They can properly diagnose and replace it.

Thank you for your assistance. The issue was indeed the electrical bypass valve. Replacing it cost 250€, and the car is now running smoothly.

Sounds like a pain! I had something similar happen on my old Renault, though it wasn't a Seat. The whistling and hissing are classic signs of a boost leak. Have you checked all the hoses connected to the turbo system? Sometimes they crack or come loose. It could also be the pressure sensor giving false readings, messing with the boost control.
