Seat Toledo Idle Problems

The IAC valve? Where is that even located, and how would I check it? I'm not super mechanically minded, to be honest.

The IAC valve controls the idle speed. If it's sticking because the throttle body is dirty, it can cause stalling. Best bet is to get a mechanic to take a look and clean the throttle body, or replace the IAC valve if needed. It fixed my stalling engine.

Just wanted to say thanks! Turns out it WAS the throttle body, absolutely caked in gunk. Cost me 425€ to get it sorted, but the car is running like a dream now. No more stalling engine!

Sounds like a dirty throttle body to me. I had similar car idle issues with my Toledo. Have you checked the IAC valve?
