No visible coolant leak. Coolant level is fine. Could the sensor really stop the whole AC system?

No leak is good. Yes, a faulty temperature sensor on the heat exchanger can prevent the AC from engaging. The system needs accurate temperature readings. If the sensor is sending incorrect data, the system will shut down as a precaution. I'd take it to a workshop to diagnose the sensor and wiring.

Just letting you know, the issue is resolved. It was the temperature sensor on the heat exchanger, like you thought. Cost 980€ to fix. Thanks for the help.

Sounds like a sensor issue in your HVAC system, maybe related to engine cooling. Any coolant leak signs? The AC not working is a symptom. Have you checked the coolant level?
