Interesting. A refrigerant leak? I haven't noticed any oily residue or hissing noise, but I also haven't been actively looking. Where exactly should I be checking for this residue? Is it something I can easily spot, or do I need to get under the car?

Definitely have a poke around the AC compressor and all the lines you can see, especially the joints. But if you can't find anything obvious, it might be a small leak. Honestly, those things are a pain to diagnose yourself without the right kit. Given the symptoms you're describing, I'd say bite the bullet and take it to a workshop. They'll pressure test the system and find the leak pronto.

Took it to the shop, and you were right it was faulty valves in the AC system. They replaced them all. Cost me around 1000€, but at least I'm not sweating anymore. Thanks for the heads up!

Sounds like a refrigerant leak to me. I had a similar issue with my old Renault Megane the AC just quit. Does it make any weird AC noise when you try to turn it on, like a hissing sound? Have you checked for any obvious signs of leakage? Sometimes you can see oily residue near the compressor.
