Coolant levels are fine, and no work has been done recently. Could a sensor malfunction or calibration issue cause this, or is the AC control unit more likely?

Since the coolant is good and no work has been done, it points to a sensor issue or the AC control unit. With the error messages and AC not working, a diagnostic scan at a workshop would be best.

Thanks for the input. The shop confirmed the heat exchanger temperature sensor was bad. Replacement, recalibration, and a minor wiring fix cost 980€. It's working now.

That sounds complex. Have you checked coolant levels? Low coolant can cause similar issues, especially with that sensor. Has any work been done on the engine or cooling system recently?
