Where would I find the fuse for the cruise control? What sort of dashboard light are we talking about? Something specific, or just the generic 'check engine' light?

Refer to your owner's manual for the specific fuse location. A generic check engine light could indicate a problem. Based on your description, you might have an issue with the cable or plug connection of the cruise control component. I recommend taking your Tahoe to a workshop to have it properly diagnosed.

Took it to the workshop as you suggested. It WAS a dodgy connection. They sorted it for 95€, and the cruise control is working perfectly again. You saved me a lot of pointless fiddling!

Have you checked for blown fuses related to the cruise control system? Is any warning light on the dashboard illuminated?
