Well, you could have a look, but honestly, thermostats can be tricky. If it's anything like mine was, the thermostat housing is a pain to get to. Save yourself the trouble and take it to a shop.

Hey, I had a similar problem with my Volvo S60. Not sure which year mine is, but symptoms sound similar. Could be a sticky thermostat. Like a door that won't quite close properly, it might be stuck open, causing those issues.
