Thanks for the reply! Coolant levels seem okay, but I haven't really looked closely at the exhaust or vacuum system. Is there anything specific I should be looking for there?

Honestly, without proper tools, it's difficult to diagnose yourself. In my case, it turned out to be a faulty sensor causing the bypass valve error. I'd recommend taking it to a workshop.

You were right! Took it to a different mechanic, and it was a faulty sensor throwing everything off. They replaced it, cleared the error, and no more overheating! The bypass valve itself was fine, so the repair cost was 0€. Thanks for the advice!

I have a V50 too, and I had similar overheating problems. Have you checked for coolant leaks? It could also be related to your exhaust system if the bypass valve is acting up. Or maybe a vacuum system issue.
