VW Golf GTI Performance Stalling and Shaking Issues

I own a 2018 VW Golf GTI Performance (mk7.5) with 81,436 km and I'm experiencing stalling and shaking while idling. I received a fault code P008700 indicating 'Fuel rail pressure too low'. To address this, I've upgraded the high-pressure fuel pump and replaced the fuel rail pressure sensor. My car is running a stage 1 pops and bangs map, with a Milltek downpipe, GPF delete, backbox delete, and Revo air intake. Despite these changes, the car sometimes stalls when idling, especially when hot, and the revs fluctuate. It's a DSG model. Any thoughts on what could be causing these issues?

I have thought of that as well however the car would run fine for 2-3 days, then fluctuate on idle the 4th day and then run fine again and so on. Wouldn’t a blocked fuel filter give a constant issue?
