Finally got the issue sorted at a new mechanic shop. Just like you mentioned, it was the throttle sensor causing all the trouble. The response delay and rough idling were driving me crazy, but the repair fixed everything. Total bill came to 290€ including parts and labor, which seemed fair given the work involved. The mechanic showed me the old throttle body, pretty obvious wear on the electrical connections. They did a full computer reset after installing the new unit and the difference was immediate.
