Checking the fluid level is tricky; you'll need the car level and access the dipstick near the transmission. Check your owner's manual for the location. Given the grinding noises, I'd recommend taking it to a Volvo specialist. They can properly diagnose it and ensure the correct fluid is used and the level is precisely set. Driving with low fluid can cause permanent transmission damage, so it's not worth the risk.
