I had a very similar brake pedal issue with my 2019 Audi Q8 e-tron last winter. The warning light hasnt illuminated yet, but Im concerned about the hydraulic brakes system performance declining this quickly in my Q4. After reading about your experience, I should probably get a complete brake inspection rather than just topping up the fluid. The inconsistent pedal pressure seems very similar to what you described.
