Checked the sensor visually, looks fine to my untrained eye. What exactly should I be looking for? And how would a fog sensor stop my mirror heating from working? Seems like a stretch!

Yeah, visually checking a sensor doesn't tell you much. It's probably an electrical issue. The mirror heating thing? No clue, but these systems are often interconnected more than you'd think. Honestly, with that many things going wrong at once and you're not that experienced, I would recommend taking it to a workshop. At least they can properly diagnose it.

Ugh, dreaded workshop visit. Alright, alright, you're probably right. I'll bite the bullet and take it in. The error memory reading and the cable connection were indeed the issue. 95€ repair cost. Thanks for the nudge!

Whoa, that's a whole lotta problems from one sensor! I had a similar thing happen in my older BR V, though not quite as many symptoms. Fog sensor issues can mess with the climate control system big time. The AC not working is probably related, as the car might think the windshield is fogged up and prevent the AC from starting to clear it. Spray nozzles being frozen when they shouldn't be... weird, but maybe linked. Have you checked the sensor itself for any obvious damage?
