The security light seems to be flashing weirdly. I only have one key, though. Should I try to reset the car electronics somehow? Or is there a way to bypass the immobilizer?

Given the symptoms and the flashing security light, it seems the key's programming is the problem. Bypassing the immobilizer isn't a good idea because of security. Visit a workshop and have them diagnose and reprogram the key. They can also check for issues with the car's electronic system.

Thanks for the advice! Took it to the shop, and you were right. The key needed reprogramming. Cost me 45€ and now it runs great!

Sounds like an immobilizer issue. When the engine starts briefly and cuts out, and an error is stored, the anti-theft system might be the problem. Does the security light behave normally when you insert the key? Is the key signal being read properly? Have you tried your spare key?
