Yeah, I gave the plug a wiggle, seemed okay. But is there a way to test it properly without just throwing a new sensor at it?

A wiggle isn't enough. Visual inspection first for corrosion, bent pins, or damaged wires. After that, a multimeter to test continuity is key to rule out a bad wire. If those check out, then yeah, could be the sensor. Still, I'd suggest taking it to a workshop.

Turns out it was a corroded connector on the knock sensor. Cleaned it up, and she's running smooth as butter now. Cost me 95€!

Sounds like a plausible cause. Have you checked the cable and plug connection of the knock sensor? A faulty connection there can mimic a defective sensor and trigger those symptoms.
