Refrigerant levels haven't been checked. But if the sensor is the issue, could that really stop the whole AC system from kicking in?

Yes, a defective heat exchanger temperature sensor can definitely prevent the AC from activating. Often, it's linked to a control unit issue. Given the symptoms, it's likely your air conditioning control unit is faulty. I'd recommend getting it properly diagnosed at a workshop.

Thanks for the advice! I took it to a shop, and you were right. The heat exchanger temperature sensor was defective, which was caused by the AC control unit. Repair ended up costing 980€. All fixed now!
