Thanks for the tip! I haven't checked the manifold pressure specifically. Where should I be looking for vacuum leaks, and is there a way to check the manifold pressure myself without special equipment?

Thanks a lot for your help! You were spot on. Took it to the workshop, and it turns out the intake manifold was defective and leaking. Cost me 1180€ to get it fixed, but at least it's running smoothly again.
