Regarding the cable and plug connections, where specifically should I be looking? Are there any connectors known to fail in the cooling system of this car?

It's hard to say exactly which connector might be the issue without seeing it. If you are unsure where to look, it might be time to visit a workshop. A defective cable or connection is likely the problem.

I took it to a technician. A defective cable connection was the problem, and it was fixed for 95€. The engine is now running smoothly, and the coolant level is stable. Thanks!

Low coolant can definitely trigger the check engine light. Have you checked the cable and plug connections? Sometimes a bad connection can cause issues.
