Peugeot 607 vacuum leak

I had a quick look at the hoses, but didn't hear any hissing. Is there a foolproof way to properly check them for leaks, short of replacing the entire lot? I'm trying to avoid that if possible!

A smoke test is the best way, but you'd need a machine. Given your mileage and symptoms, and the fact that you suspect the hose already, it's likely degraded. Honestly, for the sake of your sanity and the car's health, I reckon just bite the bullet and get them replaced. It'll be cheaper than chasing ghosts. Take it to a trusted workshop.

The advice was spot on. Took it to the garage, and they found a split in the hose, just as suspected. Replaced it, and all's well. Cost me 175€, but she's running sweet as a nut now. Appreciate the help!

Sounds like a vacuum leak. Have you checked all the vacuum hoses connected to the intake manifold? A faulty hose can cause fluctuations in manifold pressure, triggering the check engine light and causing idle issues. Any hissing sounds coming from under the bonnet?
