After getting multiple quotes, I finally took my RS3 to a dealership who properly diagnosed and fixed the IAT sensor problem. The whole repair including parts and labor cost me 320 Euro. More expensive than expected but worth it since the car runs perfectly now. The diagnostic tool readings all check out normal and the engine performance is back to what it should be. No more rough running or power loss issues. The intake air temperature readings are stable and consistent now, exactly like they explained would happen with a properly working sensor. Really glad I asked here first, helped me understand what I was dealing with before going to the shop. Good to know these temperature sensor problems are common and fixable.
