Coolant level seems fine. I haven't checked the sensor readings, to be honest. But if it's the thermostat, is it a DIY job or should I just bite the bullet and take it to a shop?

Could be a defective map thermostat, I've seen that a lot. While you could DIY, messing with the coolant system can be tricky. For that year and model, and the symptoms you've described, I'd say get a quote from a trusted shop. It might save you headaches in the long run.

Alright, appreciate the help! I'll get it checked out. Seems like the thermostat cooling circuit motor is defective, and a defective map thermostat is probably the culprit. Getting it repaired for around 350€. Thanks again!
