Pressure sensor, huh? Where exactly is that located, and how would I check it? As for the relay switch, where is that even located? Any chance it's just a fuse?

Okay, the pressure sensor is usually somewhere on one of the A/C lines, often near the condenser. As for how to check, you'd need a multimeter and the wiring diagram for your Praktik to test the voltage. Relays are often near the fuse box, or even under the hood. It's possible it's a fuse, but undervoltage is a bigger issue. Maybe you should take it to a workshop, I'm not sure what else it could be.

It was undervoltage, like you said. The repair set me back 240€. Thanks for the help!

Sounds familiar. I had a similar issue with my Praktik's A/C system a while back. The air con would just randomly cut out. Have you checked the pressure sensor? Also, is there power getting to the relay switch for the compressor? It could be a faulty relay. But honestly, it could be a number of things with the HVAC system. Was any work done recently? Any other electrical issues?
