Alright, so I'm pulling my hair out here. My 2021 Skoda Superb hybrid is playing up something fierce. It's got about 209906 km on the clock. I drive a Superb too, and had something similar happen. Higher fuel consumption and rough starts. Have you checked the air intake or tried throttle cleaning? Could be a dirty throttle valve affecting the engine idle.

Throttle cleaning involves cleaning the throttle valve, which controls how much air goes into the engine. If it gets gunked up, it messes with the air fuel mixture, hence the poor engine idle and fuel consumption. The accelerator pedal module could be the culprit too. Honestly, if you're not super confident, I'd take it to a workshop. They can diagnose it properly.
