Voltage readings? I'm not that technical! The mechanic mentioned the sensor being faulty, but didn't go into detail. How did you figure out it was specifically the sensor on your Peugeot? Was there a specific test?

They used a diagnostic tool to monitor the sensor's output while the engine was running. The readings were all over the place – completely erratic and didn't match the actual exhaust pressure. Honestly, unless you have access to proper diagnostics, you're probably best off letting a workshop handle it. Could be a pain to diagnose otherwise.

Mechanic replaced the exhaust back pressure sensor, and the problem is sorted. Cost me 245€ all in, but at least the smoke screen has stopped! Thanks for the help!
